Ziti alla Genovese: A Classic Italian Delight

Ingredients
- 500gziti pasta
- 800gbeef chuck, cut into large chunks
- 1kg onions, thinly sliced
- 2cloves garlic, minced
- 100ml white wine
- 3 tablespoonsolive oil
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving
- Fresh basil leaves, for garnish
Instructions
- Heat the olive oil in alarge potover medium heat. Add the beef chunks, season with salt and pepper, and brown them on all sides. Remove the beef and set aside.
- In the same pot, add the sliced onions and minced garlic. Cook over low heat until the onions are golden and caramelized, about 30 minutes.
- Return the beef to the pot, add the white wine, and pour in enough water to just cover the ingredients. Bring to a simmer, cover, and cook for about 2 hours, or until the beef is tender.
- Cook the ziti in alarge potof salted boiling water until al dente. Drain well.
- Toss the cooked pasta with the beef and onion sauce. Serve garnished with grated Parmesan cheese and fresh basil leaves.
Notes
For best results, cook the onions slowly to fully develop their sweetness.
This dish tastes even better the next day as the flavors meld together.
