Instructions

  1. To start, preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. In a large mixing bowl, cream together the softened butter and brown sugar until the mixture is light and fluffy. This process incorporates air into the butter, leading to a tender cookie. Scrape the sides of the bowl as needed, then add in the large egg and molasses, mixing until everything is well combined.
  2. In a separate bowl, whisk together the all-purpose flour, ground ginger, cinnamon, ground cloves, nutmeg, baking soda, and salt. This allows the spices to integrate uniformly into the flour. Gradually add the dry mix to the wet ingredients, stirring just until a soft, cohesive dough forms. Avoid overmixing, as this can yield denser cookies.
  3. Now it’s time to create that creamy cheesecake center! In a clean bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth. This step is crucial as it establishes the smooth texture of the filling.
