Ingredients
- 2 cupsheavy cream
- 1vanilla bean, split lengthwise
- 1/4 cupsugar
- 2 1/4 teaspoonsgelatin powder
- 3 tablespoonscold water
- 1/2 cupwhole milk
- Fresh berries, for garnish
- Mint leaves, for garnish
Instructions
- Prep the Gelatin: In a small bowl, sprinkle gelatin over cold water and let stand for about 5 to 10 minutes until it blooms.
- Infuse the Cream: In asaucepan, combine heavy cream, sugar, and the seeds scraped from the vanilla bean. Cook over medium heat, stirring until the sugar dissolves and the mixture is hot but not boiling.
- Dissolve the Gelatin: Remove the cream mixture from heat. Add the bloomed gelatin to the hot cream, stirring until the gelatin is completely dissolved.
- Add Milk: Stir in the cold milk, then strain the mixture through a fine sieve to ensure it’s perfectly smooth.
- Pour and Set: Divide the mixture into serving glasses or ramekins. Refrigerate for at least 4 hours, or until set.
- Garnish and Serve: Top with fresh berries and mint leaves before serving.
Notes
Ensure the cream mixture does not boil to prevent the vanilla flavor from reducing.
