  • 3 tablespoonsunsalted butter, softened

  • 1 1/4 cupspowdered sugar
  • 1 cupsemi-sweet chocolate chips

Instructions

  1. Prepare theOvenand Pan: Preheat yourovenas per the brownie mix instructions. Grease a minimuffin tinor line with mini cupcake liners.
  2. Mix the Brownies: Prepare the brownie batter according to the package directions and fill each mini muffin cup about two-thirds full.
  3. Bake: Bake in the preheatedovenuntil the tops are set and a toothpick inserted into the center comes out clean, about 15-20 minutes.
  4. Make the Buckeye Topping: While the brownies bake, cream together peanut butter, butter, and vanilla in a bowl. Gradually add powdered sugar until the mixture is smooth and rollable.
  5. Assemble: Once brownies are cooled, roll the peanut butter mixture into small balls and press onto each brownie bite. Melt the chocolate chips and drizzle or dip the peanut butter topped brownies into the chocolate. Let set.
  6. Chill: Chill the bites in the refrigerator to set the chocolate, about 30 minutes.

Notes

For a smoother chocolate topping, mix a teaspoon of coconut oil with the chocolate chips before melting.
These bites can be frozen for up to 3 months, just thaw in the refrigerator overnight before serving.
