  • 1/2 cupbuffalo sauce
  • 1 cupcheddar cheese, shredded
  • 1/4 cupgreen onions, chopped
  • 1/4 cupcream cheese, softened
  • 12egg roll wrappers
  • Vegetable oil, for frying
  • Blue cheese or ranch dressing, for dipping

Instructions

  1. Mix Filling: In a bowl, combine shredded chicken, buffalo sauce, cheddar cheese, green onions, and cream cheese. Stir until all ingredients are well blended.
  2. Wrap Rolls: Place an egg roll wrapper on a clean surface.Spoonapproximately 2 tablespoons of the chicken mixture onto one corner of the wrapper. Fold the corner over the filling, tuck in the sides, and roll tightly. Use a dab of water to seal the final edge.
  3. Fry Egg Rolls: In alarge frying pan, heat oil to 375°F (190°C). Fry egg rolls until golden brown and crispy, about 2-3 minutes on each side. Remove and drain on paper towels.
  4. Serve: Enjoy hot with a side of blue cheese or ranch dressing for dipping.

Notes

Baking Option: For a lighter version, bake the egg rolls at 400°F (200°C) for about 20 minutes, turning halfway through until crispy.
