This Cheesy Beef and Potato Casserole is a comforting and satisfying meal that combines layers of seasoned ground beef, tender potatoes, and gooey melted cheese.

  • 4large russet potatoes, thinly sliced
  • 1small onion, finely chopped
  • 2cloves garlic, minced
  • 2 cupsshredded cheddar cheese
  • 1 cupshredded mozzarella cheese
  • 1 cupheavy cream
  • ½ cupbeef broth
  • 1 tbspolive oil
  • 1 tspsmoked paprika
  • 1 tspsalt
  • ½ tspblack pepper
  • ½ tspdried oregano
  • ½ tspgarlic powder
  • ½ tsponion powder
  • 1 tbspfresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Sauté chopped onion and minced garlic in olive oil, then add ground beef and seasonings, and cook until browned.
  3. Prepare the cream sauce by heating heavy cream and beef broth in a saucepan.
  4. Layer sliced potatoes, beef mixture, cheddar cheese, and pour the cream sauce over, then top with mozzarella cheese.
  5. Cover with foil and bake for 45 minutes, uncover and bake for an additional 15 minutes until golden.
  6. Garnish with parsley, let cool for 5 minutes, and serve warm.

Notes

Ensure to slice the potatoes thinly for even cooking and tenderness throughout the casserole. Feel free to experiment with different cheese blends, such as pepper jack for a spicy version!
