1lb chicken breasts or thighs – cut into bite-sized pieces
2 tablespoonsolive oil
1 teaspoonsalt
1/2 teaspoonblack pepper
2 teaspoonsgarlic powder
1 teaspoononion powder
12 ozegg noodles
1/4 cupunsalted butter
1/4 cupgrated Parmesan cheese
2 tablespoonschopped fresh parsley (optional)
1lemon – cut into wedges (optional)
Instructions
Start by bringing a large pot of salted water to a rapid boil. Once boiling, add the egg noodles and cook them according to the package instructions until they are al dente. Drain the noodles using a colander and set aside.
While the noodles are cooking, heat 2 tablespoons of olive oil over medium-high heat. Pat the chicken pieces dry, season with salt, black pepper, garlic powder, and onion powder. Once the oil is hot, add the chicken to the skillet in a single layer. Cook for about 5-7 minutes until golden brown, turning occasionally. Transfer the cooked chicken to a plate and set aside.
In the same skillet, reduce the heat to medium and add the unsalted butter. Allow it to melt completely and bubble slightly, then return the cooked chicken to the skillet and toss it in the melted butter to coat evenly.
Add the drained egg noodles directly into the skillet with the chicken and butter. Toss everything together gently until the noodles are well coated with the buttery sauce. Sprinkle grated Parmesan cheese and chopped parsley over the top, and serve hot with lemon wedges on the side.
