Chocolate Delight Flan

  • 1 1/4 cupssugar
  • 1can (14 oz) sweetened condensed milk
  • 1can whole milk (use the sweetened condensed milk can to measure)
  • 1/2can heavy cream (use the sweetened condensed milk can to measure)
  • 1/2can water (use the sweetened condensed milk can to measure)
  • 1 tspvanilla extract
  • Pinch of salt
  • 3.5 ozsemisweet chocolate chunks
  • 2 tbspunsweetened cocoa powder
  • 4eggs (room temperature)
  • Optional for serving: whipped cream and fruit

Instructions

  1. Preheat yourovento 350°F (175°C). Start by preparing the caramel: Melt the sugar in a mediumsaucepanover medium heat until it turns golden. Carefully pour the caramel into a round baking dish, tilting to coat the bottom evenly.
  2. In a separatesaucepan, warm the sweetened condensed milk, whole milk, heavy cream, and water. Remove from heat and stir in the chocolate chunks, cocoa powder, vanilla extract, and a pinch of salt until the chocolate is melted and the mixture is smooth.
  3. Beat the eggs in a bowl until smooth. Graduallywhiskin the chocolate mixture until well combined. Strain this mixture over the caramel in the baking dish.
  4. Place the dish in a larger baking pan. Pour hot water into the baking pan around the flan dish to a depth of about one inch. Bake for 50-60 minutes or until the flan is just set.
  5. Allow to cool in the water bath, then refrigerate for at least 4 hours. To serve, run aknifearound the edge of the flan and invert onto aplate.

Notes

Ensure the sugar does not burn when making caramel; adjust heat as necessary.
For a smooth flan, strain the chocolate mixture to remove any lumps.
Serve chilled with a dollop of whipped cream and fresh fruit if desired.
