Crispy Parmesan Roasted Carrots Recipe

Crispy Parmesan Roasted Carrots are a delightful combination of flavor and health, making them the perfect addition to any meal.

Ingredients

Scale
  • 1lb carrots, peeled and cut into thick sticks
  • 2 tbspolive oil
  • 1/2 cupfreshly grated Parmesan cheese
  • 1/2 tspgarlic powder
  • 1/2 tspsalt
  • 1/2 tspblack pepper
  • 1/2 tspItalian seasoning

Instructions

  1. Start by preheating your oven to 400°F (200°C). This ensures that when the carrots go in, they begin to roast evenly right away. While the oven is heating, prepare your baking sheet by lining it with parchment paper. This step will help in preventing the sticky cheese and carrots from adhering to the pan, making clean-up a breeze.
  2. Once your baking sheet is ready, take the freshly grated Parmesan cheese and spread it evenly across the lined parchment paper. This layer will serve as the foundation for your carrots, creating a deliciously crisp cheese crust as they bake. Make sure to cover an adequate area so that each carrot stick has a cheesy surface to yield an irresistible crunch.
  3. In a large bowl, toss the thick carrot sticks with the olive oil, salt, black pepper, garlic powder, and Italian seasoning. Make sure each stick is evenly coated; this will add layers of flavor to your dish. The olive oil helps with the roasting process, allowing the carrots to become tender while enhancing the overall taste. Don’t be afraid to get in there with your hands to mix them well!
  4. Once the carrots are seasoned, arrange them in a single layer on top of the Parmesan cheese on the baking sheet. Avoid overcrowding the pan, as this can cause steaming rather than roasting. Place the sheet in your preheated oven and bake for about 25–30 minutes until the carrots are tender and the cheese has melted into a beautiful golden crust. Keep an eye on them to ensure they don’t burn!
  5. After removing them from the oven, allow the crispy Parmesan roasted carrots to rest for about 2–3 minutes. This resting period helps the cheese crust firm up slightly, making them easier to serve without falling apart. Once rested, scoop them onto a serving platter and enjoy the crispy goodness!

Notes

For optimal flavor, use fresh Parmesan cheese. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven.
