Ingredients

Scale
  • 1 1/2 cupsgraham cracker crumbs
  • 1/4 cupgranulated sugar
  • 1/2 cupunsalted butter, melted
  • 1 cupsemi-sweet chocolate chips (for the chocolate layer)
  • 1/2 cupheavy cream (for the chocolate layer)
  • 24 ozcream cheese, softened
  • 1 cupgranulated sugar (for the filling)
  • 3large eggs
  • 1 cupheavy cream (for the filling)
  • 2 teaspoonsvanilla extract
  • 1 cupsemi-sweet chocolate chips (for the ganache)
  • 1/2 cupheavy cream (for the ganache)

Instructions

  1. Start your baking journey by preheating your oven to 350°F (175°C). Next, take your 9-inch springform pan and grease it to prevent the cheesecake from sticking. This initial step is crucial for ensuring that your crust and filling come out perfectly.
  2. In a mixing bowl, combine your graham cracker crumbs and granulated sugar. Pour in the melted butter and mix thoroughly until all ingredients are well combined. Press this mixture evenly into the bottom of your greased springform pan, creating a solid base for your cheesecake. Bake the crust for approximately 10 minutes, then allow it to cool completely before adding the next layers.
  3. Now it’s time to indulge in chocolate! Heat the heavy cream in a small saucepan over medium heat until it starts to simmer. Immediately pour it over the semi-sweet chocolate chips and let it rest for about 2 minutes to soften the chocolate. Stir the mixture until it transforms into a silky, smooth chocolate layer. Spread this luscious chocolate over the cooled crust, then refrigerate it for about 30 minutes, allowing it to set.
  4. In a large mixing bowl, beat the softened cream cheese alongside the sugar until you achieve a smooth consistency. Incorporate the eggs one at a time, ensuring each is fully blended before adding the next. Once all the eggs are mixed in, add the heavy cream and vanilla extract, giving it a good mix until everything is nicely diluted. Then, pour this creamy mixture over the chilled chocolate layer, spreading it evenly.
  5. Place your cheesecake in the preheated oven and allow it to bake for 55-60 minutes. The key is to watch for the edges to set while the center remains slightly jiggly — this is what creates that perfect creamy texture. Once baked, take it out and let it cool at room temperature before placing it in the refrigerator to chill for at least 4 hours or ideally overnight. This resting time is essential for the flavors to meld beautifully.
  6. For the crowning touch, prepare the ganache by heating the heavy cream once again until it simmers. Pour it over the remaining semi-sweet chocolate chips and let it sit for about 2 minutes. Stir until you reach a shiny, smooth consistency. Pour this decadent ganache over your chilled cheesecake and spread it evenly with a spatula. Chill it for an additional 30 minutes before serving, allowing the ganache to firm up.
