This Chicken Pecan Cranberry Salad on Apple Slices is a refreshing and healthful treat!

Ingredients

2large apples, halved and cored
2 cupscooked chicken, shredded
1/4 cupmayonnaise
1/4 cupGreek yogurt
1/2 cupchopped pecans
1/4 cupdried cranberries
2 tablespoonsfresh parsley, chopped
1 tablespoonDijon mustard
1 teaspoonhoney
Salt and pepper to taste
Lettuce leaves for garnish
Instructions
In a spacious mixing bowl, whisk together the mayonnaise and Greek yogurt until well blended. Add Dijon mustard and honey, season with salt and pepper.
Add the shredded chicken, chopped pecans, dried cranberries, and fresh parsley. Gently fold together until coated with dressing.
Halve and core the apples; place a lettuce leaf atop each apple half.
Portion the chicken salad over each apple half.
Serve immediately or refrigerate for a short while.
