  • 3/4 cupsemi-sweet chocolate chips

Instructions

  1. Start by preheating your oven to 350°F (175°C) to ensure it’s ready when you’re finished mixing. While your oven heats, take a moment to line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. Utilize the fine side of a box grater to shred your zucchini. Squeeze excess moisture from the grated zucchini.
  3. In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth and creamy. Add the egg and vanilla extract, whisking until fully incorporated.
  4. Gently mix in the flour, baking soda, salt, and cinnamon (if using). Stir until just combined, being careful not to overmix.
  5. Fold in the grated zucchini and semi-sweet chocolate chips, ensuring even distribution without overmixing.
  6. Pour the batter into the prepared pan and smooth the surface. Bake for 25 to 30 minutes until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
  7. Remove from the oven, let cool completely in the pan, then lift out and slice into squares.
