2ripe pears, thinly sliced
1 cupfresh ricotta cheese
2 tablespoonshoney (plus extra for drizzling)
1 teaspoonvanilla extract
1 teaspoonlemon juice
4slices of crusty bread (like sourdough or ciabatta)
1 tablespoonolive oil
A pinch of salt
A handful of chopped walnuts (optional, for crunch)
Fresh mint leaves for garnish (optional)
Instructions
In a medium bowl, combine the fresh ricotta cheese, honey, vanilla extract, lemon juice, and a pinch of salt. Use a fork or small whisk to mix the ingredients together until you achieve a smooth and creamy consistency.
Next, preheat your skillet or grill pan over medium heat. While it’s heating, brush a light amount of olive oil on each side of the bread slices. Toast each side for about 2-3 minutes, or until they develop a nice crispness and turning golden.
Once your bread is toasted, it’s time for the fun part—assembling your Pear & Honey Ricotta Toast! Spread a generous layer of your creamy honey ricotta mixture on each slice of toasted bread and layer the thinly sliced pears on top.
If desired, sprinkle the chopped walnuts on top of the pears and drizzle a little more honey over the entire creation. Finish with fresh mint leaves on top.
