  • 2 tablespoonscream cheese, softened
  • 120ml pomegranate seeds (arils)
  • 2 tablespoonsfresh mint leaves, finely chopped
  • 1small garlic clove, minced
  • 1 tablespoonscallions, finely sliced (optional)
  • 1 tablespoonextra-virgin olive oil
  • 0.5 teaspoonlemon zest
  • 1 teaspoonlemon juice
  • Freshly ground black pepper, to taste
  • Salt, to taste

Instructions

  1. Start by crumbling the feta cheese into a medium mixing bowl. Add in the Greek yogurt and softened cream cheese. Using a fork or hand mixer, blend the cheeses together until you achieve a smooth, creamy consistency.
  2. Next, mix in the minced garlic, lemon zest, and lemon juice into the cheesy blend. Add freshly ground black pepper and salt to taste.
  3. Using a spatula, spread the creamy feta mixture evenly onto a serving plate or into a shallow bowl. Drizzle a tablespoon of extra-virgin olive oil over the top and sprinkle the pomegranate seeds evenly across the surface.
