Ingredients

Scale
  • 1 tablespoonvegetable oil
  • 3cloves garlic, minced
  • 1small shallot, finely chopped
  • 1pound ground beef (85/15)
  • 2 tablespoonssoy sauce
  • 1 tablespoonoyster sauce
  • 1 teaspoonbrown sugar
  • 1 tablespoonfresh lime juice
  • 1/2 teaspoonchili flakes or1minced Thai chili
  • 1 cupfresh Thai basil leaves, chopped
  • 8to10rice paper wrappers
  • 1/2 cupfresh mint leaves (optional)
  • 1/2 cupcilantro leaves (optional)
  • 1/4 cupsliced green onion (optional)
  • 1/4 cupjulienned carrots or cucumbers (optional)
  • 1/4 cupdipping sauce (soy-lime or chili-garlic blend)

Instructions

  1. Start by adding vegetable oil to your skillet and set the heat to medium. Once the oil is hot, toss in the minced garlic and finely chopped shallot. Sauté them together until they release a fragrant aroma, which typically takes just a minute or two.
  2. Next, add the ground beef to the skillet with the sautéed aromatics. Use a wooden spoon or spatula to break apart the meat as it cooks. Keep stirring until the beef is fully browned, ensuring there are no pink spots remaining.
  3. Once the beef is browned, it’s time to amplify the flavor. Add soy sauce, oyster sauce, brown sugar, and chili flakes to the skillet. Stir well and allow the mixture to simmer for 2-3 minutes.
  4. After the beef mixture has simmered, take the skillet off the heat. Squeeze in fresh lime juice and fold in the chopped Thai basil and any additional herbs you like.
  5. Fill a shallow plate with warm water and set up a rolling station with your cooked beef mix and any other desired fillings nearby. Submerge one rice paper wrapper into the warm water for about 5-10 seconds. Once it’s pliable, remove it from the water and place it on a clean surface.
  6. Begin to build your rolls! Position a spoonful of the beef filling near the bottom section of the rice paper. Fold the bottom of the wrapper over the filling first, tucking in the sides, and then rolling it up tightly.
  7. Once you’ve assembled all the rolls, cut each roll in half to showcase the beautiful fillings inside. Arrange on a platter and serve them with your favorite dipping sauce.

Notes

These rolls are best enjoyed fresh, but leftovers can be stored in the refrigerator for a couple of days. Freezing is recommended for the filling only.
