  • 1 tbspolive oil
  • 1 1/2 cupspanko breadcrumbs
  • 1 tspdivided kosher salt
  • 1lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbspall-purpose flour
  • 1large egg, beaten
  • 2 tspgarlic powder
  • 2 tsponion powder
  • 1 tspdried oregano
  • A pinch of cayenne pepper (optional, for a kick)
  • Freshly ground black pepper, to taste
  • Olive oil spray (for cooking)
  • Assorted dips (optional): ketchup, low-fat ranch, BBQ sauce,honeymustard, marinara

Instructions

  1. In a mixing bowl, combine flour, half the salt, garlic powder, onion powder, oregano, cayenne, and black pepper. Coat the chicken pieces evenly with this seasoning mix.
  2. Dip the seasoned chicken pieces into the beaten egg, then dredge in panko breadcrumbs mixed with olive oil and the remaining salt.
  3. Arrange the chicken in a single layer in the air fryer basket. Spray lightly with olive oil spray.
  4. Cook in the air fryer at 400°F for about 8 minutes, flip, and continue cooking for another 4-6 minutes until golden and crispy.

Notes

For anovenmethod, bake at 400°F on a lined baking sheet for 20-25 minutes, flipping halfway through.
