  • 1/4 cupolive oil
  • 5 cupsfrozen shredded hash browns (approximately1lb)
  • 1 tspchili powder
  • 1 tspgarlic powder
  • 1 tbspcumin
  • 1/4 tspfennel seeds
  • 1/2 tspkosher salt
  • 2green onions, sliced
  • 1/4 cupshredded cheddar cheese, plus extra for topping
  • 1 tbspbutter
  • 4eggs
  • Optional garnishes: salsa, fresh cilantro

Instructions

  1. Heat the olive oil in alarge skilletover medium heat.
  2. Add hash browns and spread evenly. Cook without stirring for 7-10 minutes until the bottom is golden brown and crispy.
  3. Sprinkle chili powder, garlic powder, cumin, fennel seeds, and kosher salt over the hash browns. Mix gently.
  4. Add green onions and cheddar cheese. Allow the cheese to melt slightly.
  5. Create four wells in the hash browns, add butter to each, and crack an egg into each well.
  6. Cover and cook until eggs reach desired doneness, about 5-8 minutes.
  7. Garnish with extra cheese, salsa, and cilantro if using. Serve hot.

Notes

For a crispy hash brown base, avoid stirring too often to allow a crust to form.
Feel free to swap cheddar with your favorite cheese or add cooked meats like sausage or bacon for extra flavor.
