Ingredients
- For the Cake:
- 2 cupsflour
- 1 cupgranulated sugar
- 1 cuppacked light brown sugar
- 1½ tspbaking soda
- ½ tspsalt
- ½ cupcocoa powder
- ½ cupboiling water
- 10 tbspmelted butter
- 1 cupsour cream
- 2large eggs, beaten
- 2 tspvanilla extract
- 1½ cupsdried shredded zucchini
- For the Frosting:
- 8 ozsoftened cream cheese
- ½ cupsoftened unsalted butter
- 2½ cupspowdered sugar
- ⅓ cupcocoa powder
- ¾ tspvanilla extract
- ⅛ tspsalt
- Optional: 2 tbsp mini chocolate chips (for topping)
Instructions
- Preheat theovento 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, combine flour, sugars, baking soda, and salt. Mix well.
- Dissolve cocoa in boiling water, let cool slightly, and add to dry ingredients along with melted butter, sour cream, eggs, and vanilla. Stir until smooth.
- Fold in shredded zucchini and pour batter into prepared pan.
- Bake for 35-40 minutes or until a toothpick inserted comes out clean.
- For the frosting, beat cream cheese and butter until smooth, then gradually add powdered sugar, cocoa powder, vanilla, and salt.
