  • 1½ tspbaking soda
  • ½ tspsalt
  • ½ cupcocoa powder
  • ½ cupboiling water
  • 10 tbspmelted butter
  • 1 cupsour cream
  • 2large eggs, beaten
  • 2 tspvanilla extract
  • 1½ cupsdried shredded zucchini
  • For the Frosting:
  • 8 ozsoftened cream cheese
  • ½ cupsoftened unsalted butter
  • 2½ cupspowdered sugar
  • ⅓ cupcocoa powder
  • ¾ tspvanilla extract
  • ⅛ tspsalt
  • Optional: 2 tbsp mini chocolate chips (for topping)

Instructions

  1. Preheat theovento 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine flour, sugars, baking soda, and salt. Mix well.
  3. Dissolve cocoa in boiling water, let cool slightly, and add to dry ingredients along with melted butter, sour cream, eggs, and vanilla. Stir until smooth.
  4. Fold in shredded zucchini and pour batter into prepared pan.
  5. Bake for 35-40 minutes or until a toothpick inserted comes out clean.
  6. For the frosting, beat cream cheese and butter until smooth, then gradually add powdered sugar, cocoa powder, vanilla, and salt.
  7. Spread frosting on cooled cake and sprinkle with mini chocolate chips if desired.

Ensure zucchini is not overly wet to maintain the cake’s perfect texture.
