Lemon Garlic Roast Chicken

Ingredients
- 1whole chicken (about4–5pounds)
- 2lemons, halved
- 1head of garlic, halved crosswise
- 4sprigs of fresh rosemary
- 4sprigs of fresh thyme
- Salt and pepper, to taste
- 3 tablespoonsolive oil
- 1/2 cupchicken broth
Instructions
- Preheat yourovento 375°F (190°C).
- Prepare the chicken: Remove any giblets from the chicken and pat dry with paper towels. Season the cavity with salt and pepper, and stuff with lemon halves, garlic, and half of the rosemary and thyme.
- Truss the chicken: Tie the legs together with kitchen twine and tuck the wing tips under the body.
- Season: Rub the outside of the chicken with olive oil and season generously with salt and pepper. Place the chicken breast side up in a roasting pan.
- Roast: Place in theovenand roast for 1 hour and 20 minutes, or until the juices run clear when you cut between a leg and thigh.
- Rest: Remove the chicken from theoven, cover with aluminum foil, and let it rest for about 10 minutes before carving.
