  • Sparkling water, to top up
  • Ice cubes
  • Mint sprigs, lime slices, and peach slices for garnish

Instructions

  1. Peach Sorbet: In a blender, puree the peaches, sugar, and lemon juice until smooth. Transfer to an ice cream maker and churn according to the manufacturer’s instructions. If you don’t have an ice cream maker, freeze the mixture in a container, stirring every hour until it’s evenly set.
  2. Mojito Mix: Muddle the mint leaves with lime juice and sugar in a pitcher. Add rum and stir to combine. Refrigerate until chilled.
  3. Assemble the Float: Scoop peach sorbet into glasses. Pour the chilled mojito mix over the sorbet. Top with sparkling water and add ice cubes.
  4. Garnish: Decorate each glass with mint sprigs, lime, and peach slices.

Notes

For a non-alcoholic version, replace the rum with more sparkling water or a splash of apple juice.
