  • 1/2 cupcrunchy peanut butter
  • 1/2 cupgranulated sugar
  • 1/2 cuppacked brown sugar
  • 1large egg
  • 1 teaspoonvanilla extract
  • 1 cuprolled oats
  • 1/2 cupchocolate chips
  • 1/2 cupraisins
  • 1/2 cupchopped pecans

Instructions

  1. Preheat yourovento 350°F (175°C) and line a baking sheet withparchment paper.
  2. In a bowl,whisktogether the flour, baking soda, and salt.
  3. In another bowl, cream the butter, peanut butter, and sugars until light and fluffy. Beat in the egg and vanilla.
  4. Gradually mix in the dry ingredients until combined, then fold in the oats, chocolate chips, raisins, and pecans.
  5. Drop heaping tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes until golden around the edges. Let cool on the sheet for 5 minutes, then transfer to awire rackto cool completely.

Notes

For a nut-free version, omit the pecans and add an equivalent amount of seeds or additional chocolate chips.
The dough can be chilled for 30 minutes before baking if desired, to help the cookies maintain their shape.
