  • 2 tablespoons(15g) unsweetened cocoa powder
  • 1 teaspoon(5g) baking powder
  • 1/4 teaspoonsalt
  • 1/2 cup(100g) granulated sugar
  • 1/2 cup(113g) unsalted butter, melted and cooled
  • 2large eggs
  • 1/4 cup(60ml) buttermilk
  • 1 tablespoonred food coloring
  • 1 teaspoonvanilla extract
  • Powdered sugar, for dusting (optional)

Instructions

  1. Prepare the batter: In a bowl, sift together flour, cocoa powder, baking powder, and salt. In another bowl,whiskmelted butter, sugar, eggs, buttermilk, red food coloring, and vanilla until smooth. Fold the dry ingredients into the wet, mixing just until combined.
  2. Rest the batter: Cover the batter and chill in the refrigerator for 1 hour to help the madeleines develop their characteristic bump.
  3. Preheat theovenand prepare the pan: Preheat yourovento 375°F (190°C). Butter and flour a madeleine pan.
  4. Bake the madeleines: Fill each mold about three-quarters full with batter. Bake for 8-10 minutes until the edges turn golden and the centers spring back when touched.
  5. Cool and serve: Let cool in the pan for a few minutes, then transfer to awire rack. Dust with powdered sugar if desired.

Notes

Ensure all ingredients are at room temperature for the best results.
If the batter is too thick after chilling, let it rest at room temperature for a few minutes before spooning into the molds.
