  • 4boneless, skinless chicken breasts
  • 1 cupdiced carrots
  • 1 cupdiced celery
  • 1large onion, chopped
  • 4 cupschicken broth
  • 2cans cream of chicken soup
  • Salt, pepper, and thyme to taste
  • 1bay leaf
  • 2 cupsall-purpose flour
  • 1 tablespoonbaking powder
  • 1 teaspoonsalt
  • 1 cupmilk

Instructions

  1. Place chicken breasts in theslow cooker.
  2. Top with carrots, celery, onion, salt, pepper, thyme, and a bay leaf.
  3. Add chicken broth and spoonfuls of cream of chicken soup; do not stir.
  4. Cover and cook on high for 5 hours.
  5. Remove chicken, shred, and return to the pot.
  6. Combine flour, baking powder, and salt. Mix in milk to form a dough.
  7. Drop spoonfuls of dough into theslow cooker.
  8. Cook on high for an additional hour until dumplings are cooked through.

Notes

For a thicker broth,whiska tablespoon of cornstarch with water and stir into theslow cookerduring the last hour.
Feel free to add more herbs like parsley or rosemary for added flavor.
