  • 1 1/2 cupscrushed digestive biscuits
  • 1/3 cupunsalted butter, melted
  • 2 tablespoonsgranulated sugar
  • 4 cupscream cheese, softened
  • 1 cupgranulated sugar
  • 2 teaspoonspure vanilla extract
  • 4large eggs
  • 1 cupsour cream
  • 1 cupfresh peaches, thinly sliced
  • 1 cupfresh raspberries

Instructions

  1. Preheatovento 325°F (162°C).
  2. Mix biscuit crumbs, melted butter, and sugar. Press into the bottom of a greased9-inch springform pan.
  3. Blend cream cheese, sugar, and vanilla until smooth.
  4. Add eggs one at a time, then fold in sour cream.
  5. Pour half of the cheesecake mixture over the crust.
  6. Layer peaches and raspberries over the mixture, then top with the remaining mixture.
  7. Arrange peach slices and raspberries on top.
  8. Bake for 50 minutes or until set.
  9. Cool, then chill in the refrigerator for at least 4 hours.
  10. Garnish with whipped cream, peach slices, raspberries, and mint.

Chill the cheesecake properly to allow it to firm up.
